Featuring a menu of inventive American creations blended with time-honored classics, this inviting dining spot will instantly charm you with its alluring ambiance and tantalizing menu. Whether you are looking forward to a leisurely evening of dining or a quick dinner before catching the headline show, Ember is where you want to be. Braised Short Ribs on Polenta, Grilled Swordfish with Asparagus, Crab Cakes with Spicy Aioli, and a hearty Cobb Salad with Smoked Chicken are just a few of the delights designed to tempt the palate.
Polo Grill
Polo Grill delights diners with the ultimate classic steakhouse experience presented with timeless reverence. Richly layered decor and an abundance of custom millwork create an imaginative rendition of tradition set against crisp white linen tablecloths while a cadre of black jacketed servers set the tone for an evening of gracious dining. Each course stands as the very definition of time-honored favorites, most notably the beef dishes, all of which are 28-day dry aged certified Black Angus USDA Prime, while succulent seafood dishes such as grilled swordfish and whole Maine lobster gratinée are also classics in their own right.
Toscana
Toscana presents an evolution of Tuscan cuisine in a truly Italian setting of rich Chianina leather, hand-blown Venetian glass and Carrara marble. Evolved from generational family traditions, many of our recipes originated with the mothers and grandmothers of our own Italian culinary staff. Presented on elegant, custom-designed Versace china, masterfully prepared dishes exemplify the essence of Tuscany and celebrate Italy’s culinary passion. Perhaps the evening begins with the octopus carpaccio with Champagne vinaigrette or the artichoke and parmesan cheese timbale with black truffle sauce, followed by classic dishes such as the hand-rolled gnocchi with pesto, a rich risotto with lobster medallions and shallots, or a pan-seared sea bass filet finished with Sorrento lemon, chardonnay and capers.
Red Ginger
Red Ginger radiates harmony and tranquility while evoking the boldness and subtleties of the extraordinary Pan-Asian dishes our talented chefs have created. Much like the room itself, the Thai, Korean, Japanese and Malaysian rooted specialties are a melange of spicy and soothing, savory and sweet to please virtually every palate. Begin with a salad of spicy roast duck and watermelon with cashews, mint and Thai basil. Savor a Malaysian beef penang with coconut rice and paratha roti. Or try Thai vegetable curry with sweet potatoes, aubergine, mushrooms and basil in green curry sauce. In Red Ginger, the gustatory pleasures are as striking as the visual ones.
Terrace Cafe
Terrace Cafe is the ultimate informal dining experience any time of day, whether inside the plushily adorned dining room or alfresco at one of the shaded tables on the stylish terrace. At breakfast, Terrace Cafe features a seemingly never-ending selection of sumptuous savory and sweet temptations including made-to-order eggs, omelets, pancakes and waffles. Teatime is a celebratory daily event that irresistibly draws guests to Horizons at four o'clock sharp. As a classical string quartet plays softly in the background, our staff glides through the room presenting bountiful four-tiered pastry carts filled with freshly made finger sandwiches, colorful petits fours, richly textured scones with clotted cream and wonderfully sinful desserts. Founded by fur trappers, Montreal is now the largest French-speaking city outside France. Cosmopolitan and lively, it is a center for cinema, high fashion and finance. Here the finest shops are underground, around the modern subway. Ascend Mont-Royal for a view, or venture into the Laurentian Mountains for the stunning scenery.
The only walled city in North America and a UNESCO World Heritage Site, Quebec City has a distinct French flavor and is blessed with a spectacular location on a cliff overlooking the St. Lawrence River. Dominating the skyline is the splendid hotel Chateau Frontenac, a romantic sight with its steep-pitched roofs and French-style turrets. Quebec City is an explorer's delight with cobblestoned streets, 17th and 18th-century buildings, an immense star-shaped fortress and a funicular that you can ride between the upper and lower towns. Visit the Petit Champlain quarter, the oldest part, the Place des Armes and Plains of Abraham-all with a genteel, European character.
The largest Fjord in eastern North America, this majestic fjord was created during the last Ice Age when glaciers deepened an ancient river bed. In some places the cliffs tower 1500 feet above the river and you'll delight in watching for cavorting whales at the junction of the Saguenay and St. Lawrence Rivers.
Nova Scotia's second largest city, Sydney is located on Cape Breton Island. While the tradition is definitely Scottish, one of the highlights of a visit to Sydney is the restored French fortress at Louisbourg-where shopkeepers and inhabitants dress, live and produce goods in the tradition of the 18th century. At Sydney, you'll also find some of Eastern Canada's most beautiful parks and trails. The Alexander Graham Bell Museum is worth a visit, too.
Ascend the hillside streets to the Citadel, a star-shaped fort built in 1749, where the traditional Noon Gun recalls the British garrison. Visit the restored wharves of Historic Properties, now filled with shops, and Halifax Public Gardens, the oldest formal Victorian gardens in North America. Or drive out along the Lighthouse Route to the rustic fishing village of Peggy's Cove, for postcard-perfect Nova Scotian scenery: lobster pots, fishing boats, and a shining Atlantic seascape just offshore.

Charlotte Amalie is the Danish-flavored capital where it's fun to stroll and shop, especially if you're a U.S. citizen with double duty-free allowances. Hop a ferry to the nearby island of St. John, to snorkel or walk the nature trails, or head over to Magens Bay resort, listed as one of the world's most beautiful beaches.
St. John's, Antigua is one of the oldest trading posts in the Caribbean Sea. It is a mixture of restored buildings that date back to the 1600s and some more modern buildings. One of the great things about St. John's is that most of the sights are within walking distance; so go explore the town as soon as you disembark. As you take a stroll along the streets lining the wharf, you will notice vendors hawking everything from clothing to local crafts, artwork, and jewelry. The Public Market is arrayed with an assortment of tropical fruits that you may not recognize. If you are up for a little bit adventure, sample something that appeals to you. Just make sure to ask if it needs any preparation first.
This fertile isle is a land of rain forests, tropical flowers, and abundant sugar cane. After a stroll around the charming colonial streets and shops of the capital, Basseterre, tour the island or visit Brimstone Hill Fort, an impressive construction that is one of the wonders of the Caribbean world.
Just recently, St. Lucia, and Castries in particular, has become one of the most popular regions for tourists. The accommodations and facilities are top of the line, and the restaurants and activities fabulous. The majority of travelers reside between Castries, which is the capital of St. Lucia, and the northern end of the island. The entire north side of the island is comprised of white-sand beaches to dazzle even the most seasoned and experienced traveler.
Called the "Spice Island" for its abundance of cinnamon and nutmeg, still sold at the waterfront market, Grenada is spicy in many other ways. St. George's has historic buildings in brick and mellow stone, and one of the loveliest harbors in the Caribbean. The coastline is full of secluded coves, while the mountainous interior is rich in rainforests and frothy rivers.
The ship passes through a channel in the reef, into a broad, perfectly protected natural harbor. This is Willemstad, where Dutch gingerbread houses, superb shopping, excellent restaurants and bustling casinos abound. Nature buffs will love the exotic plants and tropical birdlife of Christoffel National Park. And don''t forget to sample the famous Cura�ao liqueur, still made here.
The tiny island of Aruba is the smallest of the ABC Islands, which include Barbados and Curacao. Aruba lies about 15 miles north of Venezuela and has limited vegetation. The landscape consists of cacti and the curiously wind-bent divi divi trees. You may also be interested in climbing atop some of the huge boulders and exploring some of its caves. Of course, the main attractions to this island are its magnificent beaches against the turquoise waters full of spectacular marine life, which lure scores of sunbathers, snorkelers, and divers each year to the island.
Though small, Aruba has room for some luxury as well. If you travel along Palm Beach, you will find the several miles of this white sand lined with a string of hotels with glitzy casinos, restaurants and exotic boutiques. The crystal-clear waters of this beach are ideal for swimming and all kinds of watersports. However, if you prefer to stay dry, you are more than welcome to enjoy Aruba''s exotic underwater world from the glass bottom boats or on a submarine excursion.
