Praised by Conde Nast Traveler for cuisine "that rivals the top restaurants on land," Tamarind is the perfect place to explore the culinary traditions of Southeast Asia, China and Japan. The menu, which honors the elements of water, wood, fire and earth, features such exotic fare as wok-seared lobster, barramundi (Asian sea bass) in banana leaf and sushi, accompanied by chilled or heated sake. And, try our specialty sushi created in collaboration with Culinary Council member and Master Sushi Chef, Andy Matsuda.
Rudi's Sel De Mer
Named for Master Chef Rudi Sodamin, Rudi's Sel de Mer is an intimate brasserie featuring classic French dishes reimagined with contemporary flair. Menu selections include whole Dover sole meuniere with shaved pink Himalayan sea salt, oysters on the half shell, fruits de mer, and salt-crust baked branzino, as well as favorites such as steak frites, duck cassoulet and coq au vin. Wine connoisseurs and novices alike can experience the art of winemaking at BLEND by Chateau Ste. Michelle, Washington State's oldest and most acclaimed winery, the intimate venue will enable guests to blend their own wine and enjoy it at dinner or in the privacy of their stateroom. The first of its kind for Holland America Line and the only purpose-built wine-blending venue at sea, BLEND has a tasting table that accommodates 10 guests who can create their own blend from a selection of five barrels of single-vineyard red wine. In addition to participating in the blending process, guests also will learn about wine from the ship's wine expert, who leads the blending session.

Blessed with a sunny climate and a fine natural harbor, San Diego has grown from a Spanish mission into a thriving town. With two universities, a world-class zoo and safari park, the famous Hotel Del Coronado and the museums and attractions of Balboa Park, it's well worth exploring.
Hollywood discovered this little fishing village back in the 1960's, and since then luxury resorts and bougainvillea-covered villas have flourished in the delightful seaside climate. Yet hints of past tranquility remain: cobbled courtyards where the locals hold their markets, and superb sport-fishing just offshore.
Mexico's largest Pacific ocean port, MazatlÃÂ¡n has been called the "Pearl of the Pacific" for its splendid beaches and island-strewn harbor. The resorts of the Zona Dorada ("Golden Zone") deserve their fame, as does the sport-fishing which is known the world over, yet somehow the city maintains much of the simplicity and peace of its fishing village past.
Sail past Los Arcos, the soaring rock archway at the extreme southern tip of Baja California that guards Cabo's perfect harbor. This idyllic bay once sheltered treasure ships from the Orient, and pirate brigs bent on those treasures. Now Cabo caters to an international vacation set, and has a strong artistic tradition famous for its black-coral jewelry.
Diamond Head, Waikiki Beach, Pearl Harbor - these names evoke feeling of magic, mystery, drama and history, and they are all located in Honolulu. The capital of Hawaii, this city not only offers some of the best beaches along side big-city skyscrapers, there are also parks, fabulous shopping, the only royal palace in America, the Arizona Memorial in the harbor at Pearl City, the Polynesian Cultural Center and more.
Historic Lahaina was once a rough-and-tumble whaling town in days gone by. Today visitors come to watch, not hunt, the humpbacks in Lanai Channel. Ascend through waving sugar cane fields to the summit of Haleakala for sweeping views over its vast dormant crater and of this beautiful island. Or, ride a tram through the Tropical Plantation on its slopes.
Located on the eastern seashore of the big island of Hawaii, Hilo is an old sugar town and the second-best (after Honolulu) seaport in the islands. Also known as the flower capital of the state, Hilo boasts flower farms and Queen Liliuokalani Park, an authentic Japanese garden. You may wish to visit the black sand beaches of the Puna District. Or Kilauea, the world's largest volcano; its crater is the legendary home of Pele, goddess of fire, who keeps watch over her domain of Volcanoes National Park.
Located on the leeward side of the Big Island and best known for its coffee, Kona was once the playground of Hawaii's royalty. You can visit both coffee and macadamia nut plantations, Kealakekua Bay where Captain Cook first landed (and was later murdered) in 1779, and The Sacred City of Refuge, a haven for ancient lawbreakers. Or Parker Ranch, the largest cattle ranch in the world, with over a quarter of a million acres.
