The menu, which honors the elements of water, wood, fire and earth, features such exotic fare as wok-seared lobster, barramundi (Asian sea bass) in banana leaf and sushi, accompanied by chilled or heated sake. And, try our specialty sushi created in collaboration with Culinary Council member and Master Sushi Chef, Andy Matsuda.
Rudi's Sel De Mer
Named for Master Chef Rudi Sodamin, Rudi's Sel de Mer is an intimate brasserie featuring classic French dishes reimagined with contemporary flair. Menu selections include whole Dover sole meuniere with shaved pink Himalayan sea salt, oysters on the half shell, fruits de mer, and salt-crust baked branzino, as well as favorites such as steak frites, duck cassoulet and coq au vin. Michelle, Washington State's oldest and most acclaimed winery, the intimate venue will enable guests to blend their own wine and enjoy it at dinner or in the privacy of their stateroom. The first of its kind for Holland America Line and the only purpose-built wine-blending venue at sea, BLEND has a tasting table that accommodates 10 guests who can create their own blend from a selection of five barrels of single-vineyard red wine. In addition to participating in the blending process, guests also will learn about wine from the ship's wine expert, who leads the blending session.

Historic Lahaina was once a rough-and-tumble whaling town in days gone by. Today visitors come to watch, not hunt, the humpbacks in Lanai Channel. Ascend through waving sugar cane fields to the summit of Haleakala for sweeping views over its vast dormant crater and of this beautiful island. Or, ride a tram through the Tropical Plantation on its slopes.
Located on the leeward side of the Big Island and best known for its coffee, Kona was once the playground of Hawaii's royalty. You can visit both coffee and macadamia nut plantations, Kealakekua Bay where Captain Cook first landed (and was later murdered) in 1779, and The Sacred City of Refuge, a haven for ancient lawbreakers. Or Parker Ranch, the largest cattle ranch in the world, with over a quarter of a million acres.
Located on the eastern seashore of the big island of Hawaii, Hilo is an old sugar town and the second-best (after Honolulu) seaport in the islands. Also known as the flower capital of the state, Hilo boasts flower farms and Queen Liliuokalani Park, an authentic Japanese garden. You may wish to visit the black sand beaches of the Puna District. Or Kilauea, the world's largest volcano; its crater is the legendary home of Pele, goddess of fire, who keeps watch over her domain of Volcanoes National Park.
